Baby Spinach

This week we celebrate baby spinach. While available throughout the year, it is currently in the peak of its season. With smaller and more tender leaves than regular spinach, baby spinach is an ideal choice for a side salad or a salad meal. You can find it pre-washed in bags or plastic containers so all you have to do is add your favorite salad ingredients — chicken, fish, nuts, seeds, and other vegetables — and enjoy! Because spinach is included on the list of foods containing the highest amount of pesticide residues, be sure to include it on your list of vegetables that you want to be sure are organically grown.
